Does anyone know where I could find information on this Subject? I've read somewhere there are over 10,000 Saints. I've been surfing the Net, but haven't really found anything talking about any in particular. I'd like to read about the most influential or most talked about Saints. I'm going through RCIA now and I was told to read up on the Saints because eventually I would have to choose one closer to confirmation.

St. Bernadette Soubirous (1844-1879)
[Her] body was first exhumed 30 years after her death. On September 2, 1909, in the presence of representatives appointed by the postulators of the cause, two doctors, and the sister of the community, the coffin was removed . . . On opening the lid, they discerned no odor and the virginal body lay exposed, completely victorious over the laws of nature. The arms and face were completely unaffected from corruption and had maintained their natural skin tone. . . . The second exhumation took place at the end of the Process on April 3, 1919. The body of the Venerable was found in the same state of preservation as 10 years earlier, except that the face was slightly discolored, due to the washing it had undergone during the first exhumation.

St. Charles Borromeo in Picayune, MS, has one of the best Catholic web sites on the Internet. Click the link on the left that says "Patron Saints". You'll find a plethora of other useful information there, too, including books you can print out or buy for a nominal charge that cover all sorts of Catholic information.
