St Valentine missing?

I was just looking at Universalis for another post and it shows that Wednesday February 14 is the day for St Methodious and St Cyril. What happened to St Valentine on Valentine's Day?

St. Valentine is still honored on February 14 but, like many other saints about whom little is known, the feast was dropped from the calendar of the Universal Church.  It doesn't mean they aren't saints but rather that many centuries later, we can't point to their heroic virtues.  All we know about St. Valentine (in fact, all three St. Valentines) is that they were all martyrs for the faith.

Since they have been removed from the universal calendar, they may be honored only in specific areas, specific churches, or specific dioceses.  St. Christopher is the best known example of a popular saint who's feast was dropped from the universal calendar.

An RCIA participant once asked me how the Church could "de-saint" someone.  She wanted to know if they had to do something bad in heaven to be de-sainted.  I assured her that Christopher is still recognized as a saint by the Church and St. Christopher medals were still available, but mass is no longer offered in his name worldwide.

I don't think just protestants were convinced these people were "de-sainted". When I was a child in Upstate NY, I dug up a St. Christopher medal in our garden. Our house had an incenerator in the basement to burn garbage and they had dumped the ashes in the garden. This medal had been burned. I kept it as a childhood treasure and as a teen wore it around my neck on a ribbon. I figured that the former occupants of the house had burned it when he was removed from the calendar list. Do you think this was the case? Just a note of trivia. The house had been built in the 1920s and also had one of those Jewish things on the front doorframe.

It's quite possible.  I remember the popular news media reporting at the time that St. Christopher was no longer a saint.  It wasn't true, of course, but those who rely on the secular media for their information could easily have been misled.
