How did Passover become the Lord's Table?

My Messianic Jewish friend mentioned in another post sent me an article about this topic from her perspectice.  The author admits that there is no clear historical record and that, by the 2nd century, the practice of the Lord's Table was widespread.  His belief, though, is that it was instituted to get rid of the "Jewish" Passover and create something new that did not resemble anything "Jewish."

ARE there any writings clearly indicating how and why the two elements of the Passover, the unleavened bread and the cup of blessing (the 3rd of 4 cups) became THE bread and THE wine?  I'd love to be able to explain it to her.
