I have heard of baptism by blood or desire for those who die before being able to be baptized. But what if one commits a mortal sin on monday, confession is not offered till saturday. On wednesday he decides he will go and confess the sin, but then dies on friday. Would he be forgiven due to the fact that the only reason he did not confess was its impossibility due to death? Is there a teaching that specifies this, or is it common sense?
I usually give this answer to anyone who asks me, or to myself, but i have never officially heard anyone say (that i remember) that one can be forgiven if the only reason he did not go to confession was because it was not possible.
Yet, I wonder if maybe the person should have made an appointment or found a special church downtown that offers confession daily. is it ok to wait till the next convenient time like the saturday? CAn you trust that if you dies betwen then your intent to go at earliest convenience will be enough to absolve you?

Yes, Brian, the way you have outlined the case is correct: proper repentance (preferably with perfect contrition, which is always effective), including the resolve to confess at the regularly scheduled time, is considered sufficient for forgiveness and salvation should the sinner die in the meantime. It would work in the same manner as baptism of blood or desire. This is a matter of theological consensus, not specifically a doctrine of the Church.
