Tonight's concern:  Father Paul being human, how do I know I wouldn't get a different pennace on any given Saturday depending on the weather, his last meal, the last confessor in the booth, etc?

You don't. 

Nor can you be certain that Father Paul will be your confessor. 

So what's the point?

I think the actual penance is not so important as the act of penance.  If he chooses something differnetly than he might have, it will not effect the outcome of your performing the penance.  You have been obedient, which is what God is looking for.  Yes??

Yes.  That sounds right to me.  Whether the priest gives you a difficult penance or an easy one, it is your determination to repent which counts.
