I have taken to visiting our chapel on Mondays during Adoration hours- I haven't signed up for any assigned time yet though- what are the usual expectations for those signed up?

Typically people sign up for a one-hour time slot and they commit to being there the entire time, or if for some reason they can't be there, to find a substitute to cover your time. Sometimes during your hour people may come and go, or you might be there alone the entire time.
Perpetual adoration is available only because people commit to these hours 24/7 because we never want Jesus, exposed in the Blessed Sacrament, to be alone and we don't want to risk the possibility of abuse or sacriledge.
From personal experience, my hour has been a time of great graces. I hope you'll consider doing this! I find it easier to make sure I get there if I have a designated time than if I think "Oh, I'll go sometime this week..." then never get there!

and are there specific prayers or can I pray for my intentions r? Can I sit and pray or should I be on my knees for the whole hour?

You can spend your hour with Jesus any way you wish, or as the Spirit guides you!
You don't have to kneel the entire time (some of us can't for physical reasons). Normally when you enter the adoration chapel with Jesus present on the altar you should genuflect or go down on both knees. A traditional prayer to say at that time is one that is said during the stations of the cross "I adore You, O Christ, and I bless You, because by Your holy cross, You have redeemed the world!"
It's nice if you can kneel for awhile. I usually kneel for the first 5-10 minutes and for the last 5-10, but it's up to you.
Sometimes I read something spiritual for awhile (lives of the saints, Sacred Scripture, etc.), sometimes I pray the Rosary or Chaplet of Divine Mercy, sometimes I just talk with Jesus and lay my burdens at His feet, sometimes I just sit in silence at the awe of being in His Holy Presence, I usually try to bring intentions from others; sometimes I do all of the above!

No specific prayers, Kim. You can bring your own material, including books for meditation, as you desire. Using materials that coincide with the liturgical calendar can be advantageous. I often turn to the Liturgy of the Hours, but also use scripture (bible) and a book of meditations. Others use prayerbooks, novena brochures, and other aids. I also spend long periods in silence, just contemplating our Lord. I divide my time between kneeling, sitting, standing, and sometimes, when alone, I prostrate myself before the monstrance.
In some special instances, there may be a request that you remember someone in your prayers, but this is a request and not a requirement.

I kneel actually for quite a bit of time. Actually I am struggling with my sponser's death this week and find the chapel quite a comfort

Kim, the purpose of the sign-in sheet is to assure that Jesus will not be left alone. As he told the apostles, "Could you not wait with me one hour?"
The only thing required of those who sign up is presence. You are committing to be there for the entire hour, or to make sure that your slot is covered if you are unable to make your commitment. At our church, we schedule one person from hour to hour, and another from half hour to half hour, so there are always two people present during adoration. That covers the time in case someone is called away or gets sick or has to go to the bathroom (which is outside at our old church).
That’s it. You can say the rosary or read scripture or pray or do whatever the Spirit calls you to do. You are just promising to be there so Jesus will not be left alone for that hour.
