Any Statistics on Adults Entering/Leaving Church?

The Church does not keep "official" statistics on those who leave, because they seldom notify anyone they are leaving.

Also, Catholics view each other as "family" so like your parents continued to count you as a member of your family even though you may have moved away, they will also always hope you will return.  Protestant churches tend to consider attendees "members" rather than "family" so the culture is different, and so is the method of counting.

Every few years, each church parish takes a census of those within its geographical boundaries.  I have seen (but cannot cite) statistics that show the adult membership growing.  A recent census in my area published in the local newspaper showed two faith groups growing:  non-denominationals and Catholics, and the latter was growing much faster than the former, both in percentage and in raw numbers.  This was evident from the published statistics, even though the article thoroughly ignored that component.

Time Magazine had an article about the growth of the Catholic Church in the American South. Seems I remember statistics, since the article remarks on the growing number of Catholic converts making up much of the growth, in addition to transplant "yankee" Catholics and the influx of hispanics.
