Is there a particular book which is generally used for the RCIA classes?  If not, what is used?  Thanks for any info. you can provide.

The Catechism of the Catholic Church :). It's a large book filled with Q's and A's
about anything you can think of. It's organized and it's sanctioned by the pope :)

Abby, The United States Catholic Catechism for Adults is widely used.

It's available from several places online. Also available in audio as well as book and has a leader's guide and a student's handbook. Excellent choice, even if your class uses something else!

A couple of years ago our RCIA program used a book that follows the catechism but breaks things down into a little more readable format.  It's called "We Believe" by Oskar Lukefahr and also has an accompanying workbook to answer questions following each chapter.  It's very good:

There is no "text" that is universally used, although the United States Catholic Catechism for Adults is intended to become one.  That's the book I would recommend.  The Catechism is a good reference, but it's written for Catholics by Catholics, and some from a Protestant background have trouble finding answers to specific questions.  The USCCA, on the other hand, is written specifically for those seeking answers about the Church, and is well referenced back to the Catechism.

Also, Protestants typically want to know what is considered doctrine and what is not, and the Catechism doesn't cover that at all.  The USCCA does.
